One Day Closer to Homemade Pancakes for My Hero!!!

It is a well known fact that I don’t know how to stick to a recipe.

It is an equally well known fact that I don’t write down my recipes.

I am breaking with tradition.

For all those who have asked, I finally wrote down my OWN recipe for pancakes.  No longer will I hand you somebody else’s recipe with all of my changes written in the margins.  This one is mine.  I gave precise (as precise as I get, anyway!!) measurements to The Ballerina as she made the pancakes.  It was great fun, and they turned out perfectly.

Normally, I prefer My Hero’s pancakes.  He just seems to have a gift for making them turn out exactly the way I like them – light and thin, with a crisp, buttery edge.  Without him here, we have to get creative.  I don’t know if these pancakes are as good as his (probably not), but they sure hit the spot this morning!

Wife of an Airman’s Blender Oatmeal Pancakes

Ingredients:

  • 2 cups of milk
  • 2 tablespoons of apple cider vinegar (regular vinegar will work in a pinch)
  • 2 teaspoons of vanilla (I don’t measure this.  I just pour it in)
  • 1/3 cup of honey
  • 1/3 cup of melted butter
  • 3 eggs
  • 2 1/2 cups of oatmeal
  • 1 teaspoon of baking powder
  • 1 tablespoon of baking soda
  • 1 rounded teaspoon of salt
  • 2 egg yolks

Dump the first seven ingredients IN ORDER into a blender.  Blend on high for 1 minute, or until the mixture is smooth.

Turn down the blender to low.  Add in baking powder, baking soda and salt.  Then add egg yolks.

Cook on a buttered skillet at 300 degrees.

There are many wonderful toppings out there, but my favorite topping is an apple-pear topping.

Apple-Pear Pancake Topping

  • 1-2 apples sliced thinly
  • 1-2 pears sliced thinly (any combination of apples and pears will work.  This morning, I used one apple and two pears)
  • 1 teaspoon of nutmeg
  • 1 tablespoon of cinnamon
  • 2-4 tablespoons of butter
  • 1/4 cup of honey or sweetener of your choice

Cook on stove until apples and pears are tender.  Serve over pancakes.  Top it off with fresh whipped cream!

Both the kids had a ball helping out in the kitchen this morning…  The Ballerina made the pancakes, and The Gymnast made scrambled eggs to go with them.

Obviously this breakfast was meant to be… There’s a guitar in the pancake!  I fell in love with My Hero listening to him play guitar.

The Gymnast makes scrambled eggs.  (Apparently it’s too hot for a shirt…)

I knew he had an ulterior motive for helping!!! He stole a bite of the Apple-Pear Sauce!!!!

Breakfast is served: Pancakes topped with Apple-Pear Sauce and fresh whipped cream with a side of scrambled eggs.  Breakfast doesn’t get much better than this!

The Gymnast couldn’t even stop eating to pose for a picture.

“Hurry up, Mom, I’m hungry!!!”

**Please note the very attractive “scarf” around The Ballerina.  She saw a picture of a model with a skinny scarf, and thought it was “absolutely adorable, Mom.” She copied the look with an old cloth belt.  Very cute.  I love my creative girl.
